Jun Shan Yin Zhen (Yellow Tea) – Hunan, China – sold per ounce
We have this listed with our green teas, but it is not really green tea, though produced similarly. But with yellow tea there is procedure at the end of production that makes it unique. We’ll call it sweating for lack of a better term. It will resemble White tea in that this an ALL Bud tea- but it is not! The name literally means Silver needles from the Gentleman Mountain and it is one of the 10 Famous Teas of China meaning that at one time it was a tribute tea to the Emperor.
The taste of this tea is truly unique. There is an initial impression of bamboo or grass seed, but the end flavor reminds us of forest floor. I always find it quite enjoyable as one expects a mellow white tea flavor and while it may be there in the background there is much more complexity and interest. We do not have this one often, so get it while it lasts!
