Elder is a plant native to most of Europe, North America, and southwest Asia. A perennial shrub that can be found growing along hedgerows, forest perimeters, and in gardens. For centuries, elderberries have been used to make preserves, wines, cordials, herbal infusions, elderberry syrup. They are noted for not only adding flavor, but color and antioxidants. The dried fruits are less bitter than the fresh. Although the branches and leaves are poisonous, the small stem which is sometimes left on the berry is safe.
Uses
The elderberry has an extensive folklore in traditional western practices. Its flowers and berries have a long history of use in traditional European medicine. Elderberry supports immune health.

Precautions
The raw fruit contains a component sambunigrin which may cause vomiting and severe diarrhea if ingested. These elderberries are dried, but we encourage brewing them with hot water and not a cold brew. We recommend that you consult with a qualified healthcare practitioner before using herbal products, particularly if you are pregnant, nursing, or on any medications.

Preparation
Whole elder berries are typically prepared as teas, tinctures, syrups, wine, cordials, and even ketchup, often combined with echinacea. Prepare a good quality water to a near boil and pour over flowers (about a heaping tsp per cup). Brew for 4-5 minutes and strain.
