Description
Aging oolong is not simply old tea; it is a specialized tea created through a slow, controlled process that produces chemical changes in a stable, dark, dry place. Over the years, the compounds in tea don’t just break down; they transform. Studies show that tea chemistry changes significantly during storage, creating new flavors. The initial sharp notes from roasting mellow out, creating deeper and more complex flavors.
Most oolongs prepared for storage are initially roasted to determine the acceptable moisture content for the storage process to begin. The stored tea is then usually taken out and inspected every two to three years and carefully re-roasted to remove excess moisture and retain flavors. Storage is in large earthenware or stone containers.
Aged Oolongs have a unique and complex taste, which is often exceptionally smooth, mellow, and pleasantly sweet – not as rich or earthy as many pu-erh teas. Our aged 2005 oolong is of superior quality with warm, comforting notes of earthy toastiness.
